Sorry I'm new to ohio football. Grew up in West Virginia and generally school size didn't matter as much with only 3 classes.

Bridgeport or Nitro would both be good opponents for NY, I think.
Regarding WV and school size: I believe that WV is different from Ohio how they do size classifications. In Ohio, you have separate size classifications for boys and girls (e.g. the boys basketball team participates in D3, the girls basketball team participates in D4.) In WV, if I'm correct, it's based off total enrollment and not broken down by gender (e.g. if boys basketball is A, then so is girls.)

Mingo central would be dream matchup then They are defending state champs and look to be on path to deep playoff run again. They have 750ish.

St Mary's actually is nearly even in enrollment to NY. That would be more equal in numbers.

Steubenville is always looking for games, but warn your AD that home and home is translated as Harding and Harding over there. Usually. Sometimes it's Harding and canceled.
