I also like the first b/c at also accounts for a nose shaded to play side. the FSG would come down on the nose and the center can check play side (in case of a slant by the wild man at nose) to BSLB. As for having both rules... I guess it depends on what kind of kids you have. If you have bright kid...

How to block the inside veer versus a traditonal 5-2 defense
I have seen people block it two different ways:
1. Double team the nose with the FSG and chip off to BSLB and have FST inside release to block the FSLB
2. Base block with FSG on FSLB and inside release with FST to second level.
Thoughts on which one is better?
